When the whole COVID-19 situation hit this spring, a lot of things changed in a hurry. Without demand for draught beer, we ended up with some extra time and tank space to fill. We immediately started scheming up “Quarantine Quad”. Traditionally a Belgian style Quad is brewed with candy sugar, as it is easily fermented and helps achieve a lighter-bodied high alcohol beer. With the uncertainty around acquiring ingredients during this time, we decided to use readily available maple syrup! Hunker down and enjoy this somewhat traditional-ish belgian ale… it’s pretty strong, but hey, you’ve got nowhere to be!
NOTE: This beer is bottle conditioned and the carbonation came out a little low, but overall we are extremely happy with how it turned out. Serve warmer than fridge temperature to experience the most flavor complexity. Cheers!
